Kappy’s Country Fried Pork Chops with Fall Harvested Mushroom Duxelle

2 8 oz. pork chops

1 cup of yellow flour
1/2 cup of white flour
1 Tablespoon of sage
1 Tablespoon of rosemary
salt and pepper to taste
2 teaspoons paprika
3 eggs
4 oz of milk

Directions for Breading
Beat the eggs and milk together, then add all dry ingredients. Dip the pork chops in and then fry until golden brown. Place on plate.

Mushroom Duxelle

1 pound of applewood smoked bacon
1 Tablespoon of minced garlic
1/2 cup of chopped white onion
1/2 cup of chopped green onions
2 cups of seasonal mushrooms – portabella and brown cap
1 1/2 cups of burgundy wine

Directions for Mushroom Duxelle
Saute bacon to medium. Add the onions and garlic then add mushrooms. Once the mushrooms appear soft, add the wine and reduce by half. Cook until a stewy texture. Remove from pan and enjoy with the pork chops.
